Ollie Fitton Junior Sous Chef

Our Junior Sous Chef, Ollie Fitton, is a bit of a legend, a recent finalist in the Young Chef of the Year Competition 2018, and he’s only 22!

As you might guess from that, Ollie’s, always had a real interest in food, which all comes from cooking at home with his mum, making really simple food using fresh ingredients.

When he left school, he went to Bury College, where he studied professional cookery and worked in the banqueting section of a large central Manchester hotel to enhance his skills and he simply hasn’t looked back…

He thinks about food constantly, though not for the same reasons as a lot of people… ‘’I’m constantly looking at flavour combinations, the construction of dishes on the plate and the overall presentation, where to source great produce, I love studying the techniques involved in preparing different foods, particularly pickling, preserving and smoking.’’

All this will stand him in good stead, especially under the wing of Head Chef Nick Edgar, who is taking his team on a food journey as he both reinvents himself and sets about crafting a new food style for The Ryebeck…
